WHO DOESN’T LOVE GUACAMOLE?
Seriously. I don’t know anyone that doesn’t, and if you don’t – you are not welcome here.
JK. You are. But I think less of you.
For all the guacamole lovers out there, I came up with a recipe the other day that I’m fairly proud of and wanted to share with you. It’s very easy, and I swear anyone can make it! If you are off bread, then just ditch it! This is actually my way of making my boyfriend eat healthier (convincing him it was a special sandwich I made just for him!) He’s a runner so he needs the carbs, and I just ditched the bread!
The topping (Mango Guacamole):
This is really easy and all you need is 5 things
1. A whole avocado
2. Half a mango
5. Lemon (or lime depending on what you like better)
1. Put the avocado in the bowl, and mush it with a fork (or a potato masher that my mom swears is easier but really looks harder. I’ll let you decide)
2. Cut up the mango into small cubes, and mix in.
3. Cut up the garlic into small pieces. If you have a Garlic Grater I would use that instead. This is again, based on how much garlic you like. I typically use 2 cloves
4. Squeeze in half a lemon
5. Add salt to taste
VOILA! There is your Mango Guacamole topping.
Then just get a chicken breast and cook it based on its size. I normally do about 15 minutes per inch on 400 or 375 convection but that’s just out of experience. I am NOT a chef. Just make sure that when you take it out, you cut it to make sure it’s not pink (if you’re not a professional who can tell just by touching it).
Finally, put the Mango Guacamole on the chicken, and you have your main dish! I tend to eat it without the bun because it’s so good without it! But, if you’re a bread fan or you’re trying to get someone you love to eat healthy, you can put it on a bun and you have a “gourmet” sandwich that is very hard not to love! Add a salad or some asparagus on the side and you’re set!
